Boxty is a traditional Irish potato pancake. There are many recipes but all contain finely grated, raw potatoes and all are served fried. The mixture is fried on a griddle pan for a few minutes on each side, similar to a normal pancake. Boxty are often served as part of a full Irish breakfast.
375 g mashed potato
375 g peeled, grated, raw potato
375 g plain flour
1½ tsp baking soda
450 ml buttermilk
8-9 spring onions, finely sliced, if desired
salt and pepper
Butter for frying
Take a large mixing bowl and place the grated potato, mashed potato, flour, baking soda and salt and pepper ( and spring onions if using) and mix all together. Slowly add the milk until you have a dropping consistency.
Heat a heavy-based frying pan or griddle, add a little butter and place spoonfuls of the batter into the hot butter. Fry gently for approx. 4 minutes on each side until a golden brown. Remove from the heat and place on a warm plate to keep hot while you cook the rest of the Boxty.
