4 – 6 servings
5 large potatoes, peeled
1 large onion
Salt and Pepper
2oz – 50g Plain flour
Oil for frying
Grate the potatoes and onion, put into a large sieve and press out the excess water. Blot dry on a piece of kitchen paper. Place the potato and onion mixture in a bowl and add the eggs, flour and seasonings. Combine well.
Heat oil in a large, heavy frying pan and drop a tablespoonful of the mixture at a time into the pan, lower the heat and fry for about 5 minutes on one side and 2-3 minutes on the other. Place onto kitchen paper to drain. Keep warm whilst cooking the remainder. Add more oil as needed.
Serve with apple sauce and soured cream.
