15 oz – 360 g Plain flour
2 teaspoons baking powder
2 tablespoons sugar
16 fl oz – 475 ml sour cream (low fat if desired)
Oil for frying
Jam of your choice
Place the flour, baking powder, sugar, eggs and sour cream in a bowl and mix well. Heat the oil and once very hot, add a tablespoon of the batter. Fry the doughnut until it puffs up and becomes a light brown colour, turn and cook on the other side. Repeat this until all the doughnuts are cooked. Drain on kitchen paper as you go along. Make a hole in each doughnut and fill with jam of your choice using a syringe. Dust liberally with icing sugar before serving.
Makes around 25 doughnuts.
