A delicious fruity Christmas cocktail
45 ml – 2 measures cranberry juice
20 ml – 1 measure brandy
45 ml – 2 measures grapefruit juice
45 ml – 2 measures Marsala
string of redcurrants
1 egg white, lightly beaten
15 ml castor sugar
Lightly brush the redcurrants with the egg whites and sprinkle with the sugar to give them a frosted appearance. Place on greaseproof paper and set aside to dry.
Place the cranberry juice, brandy and grapefruit juice in a cocktail shaker filled with crushed ice. Shake vigorously to mix thoroughly. Strain into a cocktail glass. Tilt the glass slightly and gently pour the Marsala down the side of the glass into the drink. Serve decorated with the string of frosted redcurrants dangling from the glass.
