Egg Nog is is a rich, chilled, sweet, dairy-based drink. Traditionally made with milk, cream, sugar, whipped egg whites, and egg yolks. It can also contain brandy, rum, whisky or bourbon. Throughout Canada and the United States, eggnog is traditionally consumed over Christmas season.
12 eggs, separated
6 cups milk
2 cups heavy/ thickened cream
2 cups bourbon
1+ 1/2 cups sugar
3/4 cup brandy
2 teaspoons ground nutmeg
Place the egg yolks and sugar in a large mixing bowl and, with an electric mixer, beat well for at least 10 minutes until firm and buttery. Add the Bourbon and Brandy in a slow drizzle, beating all the time. Place the mixture in the fridge and allow to cool, at least 6 hours. About 30 minutes before your guests arrive, stir the milk into the mixture. Stir in 1 1/2 teaspoons ground nutmeg. In a separate bowl beat the cream until it forms stiff peaks. In yet another bowl beat the egg whites until they too reach stiff peaks, then add the egg whites to the egg yolk mixture and gently fold in. Next fold in the cream into the egg mixture. When serving garnish with a sprinkle of ground nutmeg.
