A tasty recipe for Plum, Lemon and Herb Stuffing which will enhance your Christmas dinner
500g – 1 lb plums, halved, stones and sliced
grated zest and juice of 1 large unwaxed lemon
1 tablespoon honey
30g – 1 oz butter
1 tablespoon each chopped parsley, thyme, oregano
1 teaspoon salt
1/2 teaspoon pepper
250g – 8 oz medium oatmeal
375g – 12 oz fresh white breadcrumbs
2 eggs, beaten
Melt the butter in a pan, add the onions and the plums and cook gently for 5 mins until almost tender. Stir in the honey, herbs, salt and pepper.
Mix the oatmeal and the breadcrumbs in a large bowl and add the onion mixture and eggs. Stir until well combined.
Cover the stuffing with clingfilm and place in the fridge until needed.
