Creamed Spinach

A delicious recipe for Creamed Spinach, the addition of cream and a touch of nutmeg make this dish really special

Ingredients:

1.5kg – 3lb Spinach
For the sauce:
30g – 1 oz butter
30g – 1 oz plain flour
salt & Pepper
150ml – 1/4 pint milk
1/2 teaspoon freshly grated nutmeg
2 tablespoons double cream

Method:

Cook the well washed spinach in 150ml – 1/4 pint boiling water for 1 minute, drain well and chop finely.
For the sauce. place the butter, milk, flour, salt and pepper into a pan. Whisking continuously, cook gently until thickened. Simmer for 2 minutes, still stirring. Add the spinach and nutmeg and stir well until well blended and heated right through. Add the cream, stir well and pour into a warmed serving dish.
