A tasty recipe for Cranberry and Chestnut Stuffing, traditional Christmas ingredients.
250g – 8oz Cranberries
1 teaspoon ground cinnamon
grated zest and juice of one orange
480g – 16oz packet whole, peeled chestnuts, finely chopped
250g – 8oz fresh white breadcrumbs
30g – 1oz butter
2 onions, finely chopped
salt and pepper
Melt the butter in a pan then add the onion and cook gently for 2 mins. Add the cranberries, cinnamon, orange zest and juice then cook gently for a further 2 mins. Remove from the heat.
Place the chestnuts, breadcrumbs, salt and pepper in a large bowl and mix well. Stir in the cranberry and orange mixture and the egg, and mix well.
Cover the stuffing with clingfilm and place in the fridge until ready to use.
