Scandinavian Lemon- Baked Cod

A delicious main fish course which can also be made using any white fish of your choosing.


500 g cod fillet
60 ml melted butter
2 tablespoon lemon juice
60 g Plain flour
½teaspoon salt
white pepper


Pre-heat oven to 180°C – 350°F – Gas 4.

If fish fillets are large, cut into serving pieces. Mix together the butter and lemon juice. In another bowl mix together the flour, salt and pepper. Dip the pieces of fish into the butter mixture first and next coat in the flour. Place the fish into an oven-proof dish. Pour the remaining butter mixture over the fish and sprinkle with paprika. Bake, uncovered for approx. 30 minutes until cooked through. Garnish with lemon wedges and parsley. Serve.
