Here are a selection of great, old-fashioned treats which you can enjoy making at home. These also make lovely gifts when placed in see-through gift bags and decorated with a bow.
- 1 lb Brown Sugar
½pint single Cream
1 tblsp. Syrup
½ teasp. Vanilla Essence
¼ lb chopped Walnuts
¼ lb Raisins
Place sugar, cream and syrup in a saucepan over medium heat, stir well until it comes to the boil. Boil for 15-20 minutes. Remove from the heat and stir in the walnuts, raisins and vanilla essence. Place the saucepan in a bowl of cold water and stir until the mixture thickens. Pour into a well-buttered tin and mark into squares with a knife. Leave to go completely cold.
- 1 large tin of condensed milk
1 lb demerara sugar
¼ lb butter
Place all the ingredients into a saucepan and bring to the boil, stirring all the time until the mixture thickens. Remove from the heat. Pour into a well-buttered tin and leave to cool. Mark into squares with a knife and leave to go completely cold. Cut into squares.
This fudge is delicious as it is but you can also add walnuts, chopped brazil nuts, dried fruits vanilla essence or chocolate if wished.
- 1 lb castor sugar
¾ lb desiccated coconut
1 teacup milk
¼ teasp cream of tartar
Place the sugar, milk and cream of tartar into a saucepan and bring slowly to the boil over a low-medium heat. Leave to boil for around 20 minutes before stirring in the coconut. Line a tin with baking parchment or use a silicone mould. Place half the mixture into the mould. Colour the remaining mixture with a couple of drops of red or pink food colouring, stir in well and place this over the white mixture. Leave to go cold and cut into squares when firm.
