Recipe for Trucha a la Andorra (Trout), Andorra does not have a coastline but it does have sparkling clear waters in the form of rivers from where these delicious trout come.
4 fresh trout, gutted
8 rashers of smoked streaky bacon
1 garlic clove, peeled and cut in half
butter for greasing
For the almond sauce:
1 garlic clove, finely chopped
Small bunch of parsley
50g hard cheese
50g white almonds
150ml extra virgin olive oil
Salt and pepper
Pre-heat the oven to 200°C /Gas Mark 6
Rub the inside of each trout with a piece of garlic. Place two slices of streaky bacon inside the cavity of each trout and place on a greased baking tray, drizzle with olive oil and sprinkle on some salt and freshly crushed black pepper.
Bake in the oven for 20- 25 minutes until the fish is cooked through and the flesh is soft to the touch.
For the almond sauce, blend all the ingredients in a food processor until well mixed but the sauce is still coarse.
Serve the baked trout with a spoonful of the sauce.
