400 g of peeled prawns
4 tblsp extra virgin olive oil
4 crushed garlic cloves
2 teasp paprika
1½ teasp ground cumin
¾ teasp ground ginger
A pinch cayenne pepper
chopped fresh coriander or parsley
In a large frying pan gently heat the oil, garlic and spices stirring continuously until the oil is infused with the flavours. Turn up the heat and add the prawns and fry quickly over a medium heat until they are cooked through and pink. Stir in the coriander or parsley and serve.
