A delicious Apple Cake recipe from the Normandy region of France.
Pre-heat the oven: 180°C / Gas 6
150g soft butter
150g of plain flour
1 teaspoon vanilla essence
½ sachet of yeast
3 medium eggs
Peel and core the apples. Slice the apples and arrange them in the bottom of buttered cake tin.
In a mixing bowl, stir together the softened butter and sugar. Add the flour and yeast and stir well. Add the eggs one by one, mixing each time.
Cover the apples with the mixture.
Cook for 35 minutes. Turn out onto a cooling rack.
Serve warm or cold.
