Vlaamse Stovery Recipe
Vlaamse Stovery or La Carbonade Flamande is a beef stew cooked in a dark rich Belgian beer and served with the famous fries and another glass of beer! Each family will have their own special recipe of this traditional dish, which is handed down through the generations.
2 kg chunks of stewing steak
salt and freshly ground pepper
2 – 3 tblsp. plain flour
3 large onions, thinly sliced
2 bottles dark Belgium beer
3 – 4 sprigs of fresh thyme
2 bay leaves
1 tblsp. red wine vinegar
Season the chunks of meat and dust thoroughly in flour. Heat 2 – 3 tablespoons of butter in a heavy based frying pan and brown the meat in small batches. When browned remove with a slotted spoon and place in a casserole dish. Add a little more butter to the frying pan and cook the sliced onions, stirring occasionally, until golden brown. It is important to brown the onions and meat to give the stew its rich brown colour. Place the onions into the casserole with the meat. De-glaze the frying pan with the beer, scraping all the brown bits from the bottom of the pan. Bring to the boil and pour over the meat and onions. Add the sprigs of thyme and the bay leaves.
Cover and simmer over a low heat for about 1½ – 2 hours until the meat is tender. Stir in the sugar and vinegar 5 minutes before the end of the cooking time. Check the seasoning and serve piping hot.
