These hearty dumplings are a speciality of the Tyrol region of Austria..
Dice 6-8 bread rolls. Whisk ¼ litre milk with 2 whole eggs and a pinch of salt. Pour over the bread and leave to soak in. Chop one small onion, cook gently in 30g butter with 2 tablespoons choppped parsley. Add to the bread. Add 100g flour and 150-200g smoked bacon or ham, diced small. Mix well and form 8-10 dumplings with wet hands. Place in boiling salted water and allow to cook, without boiling, for 10-15 mins. Remove and serve in clear soup or with a meal in place of potatoes.
