Cheshire cheese was mentioned in the Doomsday book but is believed to date back even earlier still, maybe even as far back to pre Roman conquest times. Cheshire cheese comes in white, red or blue varieties.
12 oz Cheshire cheese
3 oz butter
1 teasp Worcestershire sauce
½ teasp freshly grated nutmeg
5 tblsp medium sherry
melted clarified butter (see notes below)
Crumble or grate the cheese into a bowl and mix in well with the butter, Worcestershire sauce and nutmeg. Slowly add the sherry and beat until smooth. Spoon into small pots and press down well. Pour the clarified butter over the tops to seal. Store in the fridge until needed.
To clarify butter melt slowly in a pan until the foaming stops. Pour into a bowl and leave to cool. Scoop away the white foamy top which contains the salt. Empty away any liquids. When needed for sealing, re-heat gently.
