Pea Soup Recipe

This thick soup made from dried peas and bacon has long been a favourite winter warmer and is so satisfying as to be a meal in itself.


2 lb split dried peas
4 oz chopped pieces of bacon
2 oz butter
1 onion, chopped
1 carrot, diced
2 pints of vegetable stock
2 oz butter
salt and pepper

Method :

Pre-soak the peas in plenty of cold water for 3 – 4 hours. Melt the butter in a large pan and add the onion, carrot and bacon cook gently for 15 until starting to soften. Add the peas and the stock stir well and bring to the boil. Cover and leave to simmer for about 1 – 1½ hours until the peas are soft and cooked. Remove from the heat and leave to cool slightly. Purée in a blender and return to the pan. Season and reheat until piping hot.
