Pwdin Pysennau, Peas Pudding

Ingredients:

1 1/2 pints of split peas
2oz butter
2 eggs
salt and pepper

Method:

Soak overnight in water. Next day tie them in a clean piece of muslin leaving some room for the peas to swell. Place in cold water and bring to the boil for about 2 1/2 hours. When they are tender press them through a sieve then add the remaining ingredients,mix together, tie them again in a clean, floured cloth and boil for a further hour. Serve hot.
