Pwdin Mynwy, Monmouth Pudding

A delicious way to use up some left-over bread


8ozs (225g) white breadcrumbs
1/2pint (275ml) milk
2 tblsp Sugar
2 tblsp butter
2 egg whites
red jam or fruit


Boil the milk and then pour over then breadcrumbs, cover and leave to stand for 10 mins. Break up the mixture with a fork and work in the butter, sugar, nutmeg, and then finally the stiffly beaten egg whites. Grease a glass soufflé dish and spread a layer of jam or fruit in the bottom, then a layer of the breadcrumb mixture, continue to do this until all the mixture has been used up and the dish is full.Place, covered, in a very moderate oven and bake for 30 mins. If desired you can caramalise the top with brown sugar under a hot grill. Serve warm with fresh cream.
