6lbs Windfall apples
1 gallon water
piece of bruised ginger
yeast and nutrient
Wash and chop up the apples (skin,bruises and core can be left in)Add boiling water and simmer for 10-15 mins. Strain onto the sugar and thinly peeled lemon rind. Add the lemon juice, cloves and bruised ginger. Cool to 21°C, then add the yeast and nutrient, cover and leave in a warm place for 24 hours. Put into a fermentation jar, put in an air lock and leave for 4 weeks. Syphon off and mature for a further 6 weeks before bottling.
