Crempog Furum, Yeast Pancakes

Serve hot with lahings of creamy Welsh butter for high tea

Ingredients:

12oz strong bread flour
1/4oz dried yeast
2 small eggs
3 tablespoons sugar
large knob butter
pinch salt
1/2 pint milk or buttermilk

Method:

Cream the yeast with a little sugar.Warm the milk and melt the butter in it. Add the sugar and salt to the flour in a bowl, make a well in the centre and pour in the milk, beat to a smooth batter.Finally add the creamed yeast and put aside to rise in a warm place. Bake as pancakes, then split in half and serve spread with lashing of butter.
