Cawl Cennin –Leek Soup is a popular Welsh soup made with tasty leeks, a symbol of Wales, but also a well-loved dish further afield now.
1 lb leeks
3 pints water or chicken stock (1.5litres)
Chop the potatoes , slice the leeks, simmer together for around 40-45 mins.Mash the vegetables or put in a liquidiser. Season and serve. This soup is also an excellent way to serve up left-over vegetables.
