- 2 eggs
1 1/4 cups flour
2 -2 1/2 cups milk
1 teaspoon salt
butter (for frying)
Mix eggs, flour and salt together.
Add the milk, a little at the time, and beat to a smooth and thin batter.
Heat a griddle or heavy-based large frying pan, add a little butter and fry the pancakes on both sides.
Stack them on a serving plate.
Serve hot, with whipped cream and jam, cooked apples, or whichever topping takes your fancy.
