Leber Knödelsuppe – Recipes from Liechtenstein


  • 100 g. liver
    25 g. butter
    1 onion
    1 roll (small white roll)
    some salt
    1 egg


Mince meat by grinding. Stew the chopped onion with butter. Soak the bread with water for 5 minutes, then squeeze out water. Mix all the ingredients and add egg (mix lightly). Add flour or bread crumbs if mixture is too moist. Finally take teaspoon and cut out small dumplings. Put the dumplings into boiling beef broth, cover and wait 10 minutes.
