Kasespätzle

Ingredients:-

  • 750g plain flour
  • 3 eggs
  • salt
  • ½ litre water
  • 250g grated cheese (a 3 cheese mix is best e.g emmental, gruyere and a strong flavoured cheese)
  •  150g butter
  •  250-300g finely sliced onion

Method:

Mix flour, eggs and a little salt with ½ litre water to a paste, DO NOT BEAT! Immediately put the mixture in small drops into boiling water ( traditionaly a spätzler is used for this job or chefs will ‘chop’ the droplets with a knife straight off a board) but you can pass it through a large colander. Cook for 1-2 mins until they start to bob, strain and arrange in layers with the grated cheese. Finally top off with the onions fried in the butter. Serve with a salad.
