Traditional Neapolitan Pizzas are made with simple, yet authentic ingredients such as the San Marzano tomatoes grown on the slopes of Mount Versuvius, and Mozzarella di Bufala Campana, made with the milk of the buffalo raised on the marshlands of Campania and Lazio. There are strict guidelines as to how Pizzas should be made to make them eligible to be called true Neapolitan Pizzas, such as the thickness of the pizza base, that it must be made by hand and the heat of the pizza oven and the wood used to fire the ovens. The Margherita Pizza was first invented by Neapolitan Pizzaiolo Raffaele Esposito in honour of Queen Margherita and he used the colours of the Italian flag as his inspiration, tomatoes – red, Mozzarella – white and basil – green.
There are three official types of Neapolitan Pizzas:-
Pizza Marinara – topping should be tomato, oregano, garlic and extra virgin olive oil.
The famous Pizza Margherita – tomato, basil, slices of mozzarella and extra virgin olive oil.
The Pizza Margherita Extra – tomato, mozzarella from Campania, basil and extra virgin olive oil.
