Icy Granitas are a great way of finishing off a meal, especially in the hot summer months.

Coffee Granita

Ingredients :

150 g sugar
500 ml water
4 cups espresso coffee

Place the water and sugar into a saucepan and boil until a syrup is formed. Take off the heat and stir in the coffee. Set aside to cool. Place in a freezer-proof container and place in the freezer. Every hour remove the container and stir up the mixture with a fork to break up the ice crystals. Once it is fully frozen it is ready to serve.

Granita di limone

Ingredients :

4 large lemons
150 g sugar
1 l water

Carefully peel off the zest from the lemons. Squeeze all the juice from the lemons. Place the water and sugar in a saucepan and bring to the boil to make a syrup. Remove from the heat and stir in the lemon juice and lemon zest. Leave to stand for around 30 – 40 minutes. Strain the syrup into a container and place in the freezer. Take the container out every hour and stir up with a fork to break up the ice crystals. When it is completely frozen it is ready to serve.

Note : You can alter the amount of sugar or lemons depending on how sweet or tangy you want your Granita to be.

Limoncello granita

Ingredients :

500 ml water
125 g sugar
50 ml fresh lemon juice
125 ml Limoncello

Place the water and sugar in a saucepan and bring to the boil, stirring a couple of times until the sugar has dissolved then leave to boil for 5 minutes to form a syrup. Stir in the lemon juice and the Limoncello and set aside to cool. Pour the mixture into a container and place in the freezer. Remove every hour and stir with a fork to break up the ice crystals. Once it is frozen it will have a fluffy texture. Serve in small glasses.

Strawberry Granita

Ingredients :

800 g strawberries
5 heaped tablespoons sugar
150 ml water
juice of 1 lemon

Cut the Strawberries into quarters and sprinkle 2 tablespoons of sugar over them. Leave to stand for an hour or two until they begin to release their juices. Crush or liquidise the strawberries and add the lemon juice. Place the water and the remaining sugar in a saucepan and bring to the boil, stirring a couple of times until the sugar has dissolved then leave to boil for 5 minutes to form a syrup. Take off the heat and allow to cool. Stir in the strawberry mixture and pour into a container and place in the freezer. remove every hour and stir with a fork. When fully frozen it is ready to serve.
