This is a simple version of a great classic Italian recipe which is delicious either on its own or with a thick slice of ham or any cold cuts, salmon (omit the smoked ham), or a crisp green selection of salad leaves.
6 – 8 large Potatoes
Tinned garden peas
Smoked ham sausage
Juice of ½ lemon
Wash the potatoes and place, still in their jackets, in the pan and cover with water, add salt to taste. Bring to the boil and tun down the heat and leave to simmer until cooked through. Peel and leave to cool. Hard boil the eggs and leave to cool. Once cooled peel the eggs and and cut into small cubes. Dice the potatoes into small pieces, same as the eggs. Cut the Gherkins and smoked ham sausage into small dice, place all these ingredients in a large mixing bowl. Open the tinned garden peas and drain, add these to the mixing bowl. Open the carrots and drain, cut into small dice and add to the bowl. Gently mix the ingredients. Spoon in enough mayonnaise to coat all the ingredients and add the lemon juice. Gently combine until everything is well coated adding more mayonnaise if necessary. Cover and leave in the fridge or somewhere cool until needed.
This filling salad makes a meal by adding some cold cuts, or serve a small portion in some small crisp salad leaves as a delicious starter or quick snack.
