- 450 g stewing or braising beef
- 1 tbsp plain flour
- 1 tbsp oil
- 25 g butter
- 1 onion, sliced
- 150 ml Guinness
- 150 ml beef stock
- 1 teasp sugar
- bouquet garni
- 12 oysters, opened
- 350 g puff pastry
- 1 egg, beaten
- salt and pepper
Pre-heat the oven to 180°C – Gas 4.
Cut the meat into cubes, removing any excess fat. Coat well with seasoned flour. Heat the oil and butter in a a flame-proof casserole dish,a and fry the meat for 10 minutes until well sealed. Add the onions and cook for a further 2-3 minutes.
Pour in the Guinness and beef stock , add the sugar and bouquet garni, cover and place in the oven for 1 hour 15 minutes.
Remove from the oven and spoon contents into a pie dish and leave to cool for 20 minutes. Increase the oven temperature to 200°C – Gas 6.
Remove the oysters from their shells, wash and pat dry, stir into the beef.
Roll out the pastry so that it will fit over the pie dish. Moisten the edges of the dish and cover with the pastry. Trim and brush with beaten egg. Bake for 25 minutes until golden brown and puffed up. Serve with a sprinkling of chopped parsley.
