3 tablespoons olive oil
1 chopped onion
2 minced cloves of garlic
2 cups of rice, washed and drained
3 cups water
1 cup coconut milk
100 grams of coconut, grated + toasted
Salt to taste
In a pan, heat the oil, sauté the onion and the garlic. Add the rice and sauté for 3 minutes, stirring occasionally. Add the water, coconut milk and cook for around 20 minutes.
Turn off the heat, stir in the grated coconut, the pepper, the salt and mix with a fork. Leave the pan covered for a few minutes.
