The Persian Kuku is loosely related to the Italian Frittata, the best known is the Kuku Sabzil, Sabzil meaning “herbs”, this is the recipe we feature here below and is a delicious and quick meal at anytime of the day. You can alter the ingredients to your own choice and taste but it is usual to include at least a selection of at least three different herbs, other things can be added according to taste such as walnuts, dried fruit or fresh berries. This recipe uses an oven to finish off the dish but if you do not have the use of one then place a cover over the frying pan and turn the heat down to the lowest possible to set the Kuku.
2 tablespoons butter or ghee
1 onion, chopped
1 garlic clove, crushed
salt and pepper
6 large eggs
½ teaspoon turmeric
1 tablespoon plain flour or cornflour
bundle of each of Parsley, chives,dill and coriander or any other combination you prefer
In a bowl whisk up the eggs and then stir in the salt, pepper, turmeric, flour and garlic. At this point you can also add the walnuts and berries if using. Heat the frying pan over a medium heat and melt the butter or ghee, add the egg mixture and spread out. leave to cook for 2-3 minutes until just setting at the edges before placing in a medium oven for around 15 minutes to set. If no oven is available cover the frying pan and turn to low heat. Serve with a spoonful of plain yoghurt.
