Ingredients make one omelette
- 3 rashers smoked bacon cut into small strips
- 2 small cooked potatoes, sliced
- 3 eggs, beaten
- salt & pepper
- 1 teaspoon butter
Melt the butter in a heavy-based frying pan. Add the strips of bacon and cook until browned. remove and set aside. Add the sliced potatoes to the pan and cook for about 5 minutes until turning golden brown, add the bacon. Season the beaten eggs with salt and pepper and pour the mixture over the potatoes and bacon, stir to begin with then leave to cook until the eggs have set, around 3-5 minutes, turning once so both sides are golden brown.
