8 fresh apricots, peeled
100 g sugar
1 vanilla pod, halved
Place 240 ml water in a saucepan along with the sugar and vanilla pod. Bring to the boil over a medium heat. Simmer for 3-4 minutes. Add the apricots and reduce the heat to a low simmer, cover and poach gently for about 10 minutes until the fruits are tender. Remove the pan from the heat and leave to cool. Chill the fruit and syrup before serving.
