200 grams of blanched almonds, ground
flaked almonds for decoration
150 ml extra virgin olive oil
4 large eggs
165 grams of caster sugar
100 grams of plain flour, sifted
Grated zest of 1 orange
Grated zest of 1 lemon
icing sugar for dusting
Preheat the oven to 180º C
Prepare a baking tin or flan tin grease well or line. About 26cm.
In a large mixing bowl whisk the eggs, sugar and olive oil until very light and fluffly, at least 12 mins, this is important as it will incorporate lots of air into the mixture. Add the ground almonds and the lemon and orange zest and fold in very gently. Sprinkle some flaked almonds over the top of the mixture and place in the oven Bake for 20 minutes until golden. Remove from the oven and allow to cool. Dust with icing sugar
